I find great pleasure in creating a visually appealing meal. This pineapple boat dinner was so easy to make and is healthy to boot!
This meal is great because once you prepare it once, you'll get the gist of things and be able to make substitutions to your liking.
Vegan? No problem! Substitute the BBQ shrimp for BBQ Jackfruit!
Avoiding carbs? Substitute the quinoa for cauliflower rice!
Cut one large pineapple in half from top to bottom.
Take a knife and cut slices into the meaty part of the pineapple, carefully as to not pierce the exterior skin.
Remove the pineapple chunks until you are left with a hallow boat in each pineapple boat. Save these chunks to use for the salsa!
Since the shrimp and salsa are so flavorful, I recommend keeping the quinoa simple. Use any brand of your liking and cook per package directions for approx. 3-4 cups.
Keep Quinoa warm until ready to be placed in pineapple boat.
Easy. Chop all the goods up and mix it together!
Once all the elements of the boat are complete, spoon the shrimp & quinoa in each pineapple boat. Serve with pineapple salsa on the side.
